Pimento-Stuffed Mushrooms

Pimento-Stuffed Mushrooms

Ingredients
1 (16 oz) pkg button or baby bella mushrooms, stems removed
1/2 cup olive oil
2 cups cheddar cheese, shredded
1/2 cup mayonnaise
2 Tbs fresh parsley, minced
1 Tbs diced pimentos
1/4 tsp cayenne pepper
1/4 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
1/4 cup plain breadcrumbs
4 Tbs unsalted butter
Directions
- Preheat oven to 375° F. Grease a large baking sheet with nonstick spray. Using a small spoon, scrape out the gills and some of the middle of each mushroom. Place mushrooms in a large bowl. Add the olive oil, and toss to coat. Arrange the mushrooms in a single layer on the baking sheet.
- In a bowl, combine the cheese, mayonnaise, parsley, pimentos and seasonings. Stir to combine, and mash the ingredients together. Fill each mushroom cap with the pimento cheese. Sprinkle the breadcrumbs over the top. Cut the butter into small pieces. Place a piece of butter on top of each mushroom. Bake for 20 to 25 minutes until tops are golden and cheese is bubbly.
